Lidia’s Pasta con Radicchio

Do you still have that bright ruby head of Radicchio in your fridge? I do. And tonight I am planning on making this pasta that came from my time studying abroad in Tuscany. We had two Italian mama’s that cooked our meals for us while we were there and this pasta was one of my favorites on the rotation.

Lidia’s Pasta con Radicchio

From Santa Chiara Study Center (and Lidia)

1 large Radicchio, chopped (the original calls for 4 medium, but the Italian version is much smaller than what I got in my produce share)

1 medium onion

2 spicy sausage links cut into small pieces

1 glass white wine

1 glass red wine

1/2 cup olive oil

2 Tbs butter

1 dried red chili pepper (to taste)

salt and pepper to taste

Put butter and olive oil in the pan and brown sausage, onion and chili pepper over medium-high heat. Slowly add wine and cover to simmer for several minutes. Add radicchio and cook uncovered until tender. Serve over short pasta (such as penne).
